Anti-Inflammatory Diet Recipes

Chronic inflammation can wreak havoc on the body. There’s really no medicine to “cure” chronic inflammation—just manage it. By making diet and lifestyle changes, you can prevent and reduce chronic inflammation while improving your overall sense of well-being.

Here are a few recipes that exclude dairy, gluten, nightshades, and other inflammatory foods but packed with the nutrients you need to live a healthier life. Enjoy!

 

Turmeric Chicken Noodle Soup

Filled with fresh veggies and lean protein, this chicken soup is the perfect meal to cozy up to!

 

Ingredients

  • 1 lb chicken breast
  • 1 large onion, diced
  • 3 cups chopped celery (stem only)
  • 2 cups diced carrots
  • 1 T ground turmeric
  • Salt and pepper, to taste
  • 3 large zucchini, julienned into thin noodles
  • Fresh parsley, to garnish

 

Instructions

  • Place chicken breast, diced onions, chopped celery, and diced carrots in a large pot.
  • Cover with water and bring to a boil, then lower heat to medium-high and cook until chicken breast is cooked through (about 30 minutes). Chicken is cooked when the juices run clear when you slice into it.
  • Transfer the chicken to a plate and let it cool before shredding it into pieces with two forks
  • Add ground turmeric to the soup, then turn heat down to medium-low. Let it simmer for 20 minutes until vegetables are soft.
  • Add in zucchini noodles and cook for 5 minutes until soft.
  • Divide zucchini noodles and soup into two bowls. Top with shredded chicken and garnish with fresh parsley.

 

Pot Beef Beet Soup

Ingredients

  • 1 tablespoon cooking fat (bacon grease, coconut oil, lard, tallow)
  • 1/2 onion, chopped
  • 1 pound beets, peeled and chopped
  • 1 bulb fennel, chopped
  • 3 cloves garlic, halved
  • 1 quart chicken or bone broth
  • 3 tablespoons balsamic vinegar
  • 1/4 cup finely sliced basil leaves
  • 1/2 teaspoon salt, plus more to taste

 

Instructions

  • Put cooking fat in inner pot of Instant Pot or electric cooking pot. Melt cooking fat in inner pot. Once melted, add onion and cook onions until clear, about 7 minutes.
  • Add the rest of ingredients to inner pot. Stir, then secure the lid. When the mixture is done cooking, turn off the electric pot, and allow to release pressure naturally for 10 minutes.
  • Next, carefully, open lid. Pour soup into large blender or food processor. Process until smooth and creamy.
